graduated from SUNY Cobleskill with an Associates as a professional
Chef in 1993 and received his Bachelor of Science degree in Food
Management from Rochester Institute of Technology in 1995. He
completed five months of intensive training under Paul Bocuse
at the Ecole Des Arts Culinaires in Ecully, France.

Chef de Cuisine Joe Kolo has over 9 years
in the business. He attended Corning Alfred and the CIA (Culinary
Institute of America) where he specialized in French Cuisine.
He is a very creative chef with a great knowledge of wines and
flavorings. He can cook off the cuff.
Previous experience includes:
- Erna's Elderberry House,
Oakhurst, California - Here he changed the menu nightly and
served seven course dinners.
- Restaurante Locust Tree,
New Paultz, New York - Nightly menu changes, and specialized
in Italian cuisine using fresh organic products.
